This StartTT proposal  aims (i) to enzymatically produce a set of phenolic antioxidants that differ  in  position  and  degree  of  glycosylation,  (ii) to  evaluate  their  properties  regarding  reactivity and  solubility,  and  (iii)  to  explore  the  market  for  industrial  partners  for  future  valorization  and development of suitable products. This  project  is  meant  as  proof-of-concept to  demonstrate  the  potential  of  a  cost-effective production of tailor-made antioxidant for industrial application.
