Projectomschrijving
In dit project zal gesleuteld worden aan de substraatsspecificiteit van trehalose fosforylase door middel van semi-rationele mutagenese. Zowel zijn donor- als acceptorspecificiteit zal worden omgezet naar alternatieve monosacchariden om de productie van trehalose analogen mogelijk te maken. Dergelijke producten hebben toepassingen in de voedingsindustrie als stabilisatoren met een lichtzoete smaak en lage calorische waarde.
