Project description

Foams are systems where air bubbles are incorporated and stabilized in a continuous phase. Most work done is mainly restricted to aqueous foams. This research will enhance the fundamental understanding of air cell stabilization at the interface of oil foams, hereby focusing on crystallizing and non-crystallizing surfactants. The acquired knowledge can form the basis for developing future food products.
