Project description

Phytosterols are known for their cholesterol lowering effect. This effect is explained by the fact that phytosterols prevent the cholesterol uptake without being absorbed themselves. They remain in the gastro-intestinal tract and finally end up in the colon. This study investigates the behavior of phytosterols in the colon. Secondly, phytosterols are enzymatically modified so that they obtain new physical-chemical properties.
