CO-FRESH stelt de ontwikkeling voor van verschillende technieken, tools en inzichten voor het herontwerpen van waardeketens in de agrovoedingssector. Deze zijn gebaseerd op de huidige expertise en sleutelfactoren waargenomen en geanalyseerd binnen de sector in combinatie met geavanceerde technologische en niet-technologische innovaties. Door middel van een collaboratieve en systemische aanpak zullen de tools en formats worden toegepast in 7 proefprojecten die uiteenlopende agro-voedingswaardeketens (met inbegrip van eiwitrijke gewassen voor mens en vee) in heel Europa vertegenwoordigen. CO-FRESH zal modellen voor collectieve innovatieacties binnen en tussen organisaties bestuderen aan de hand van de Intervention Research-aanpak.
Het CO-FRESH-consortium brengt belangrijke spelers uit de pilootwaardeketens in de agrovoedingssector samen, alsook verenigingen van actoren (landbouwers, voedselproducenten, coöperaties, consumenten); deskundigen op het gebied van technologische (inclusief digitale) oplossingen en niet-technologische (inclusief sociale, organisatorische en institutionele) oplossingen evenals deskundigen op het gebied van ecologische, sociale en economische duurzaamheid en acceptatie van de consument.
De belangrijkste doelstelling van CO-FRESH is het (her)ontwerpen en testen van innovatieve systemische benaderingen van agro-voedingswaardeketens om deze innovatie op Europees niveau op te schalen. Deze innovatieve benaderingen zullen de economische, sociale en milieuprestaties/-efficiëntie van deze waardeketens verbeteren door een slimme integratie van technologische, sociale, organisatorische, bestuurlijke en institutionele innovaties; welke eveneens leiden tot het vergroten van hun duurzaamheid.
