Project description
This project aims to transfer the scientific knowledge on predictive microbiology towards the processed meat industry. Models which predict the growth on L. monocytogenes during the shelf-life of processed meat products will be introduced. Existing models will be validated and adapted for different matrices (ham, sausages, bacon, …). A specific software tool will be developed and will be implement by interested companies.
