Project description

Het projectdoel is de "kostenefficiënte synthese van gezondheidsbevorderende glycobiosen" te bekomen met klassieke tafelsuiker (sucrose) als substraat en enzymen als groene biokatalysatoren. Na de synthese van een aantal alternatieven zullen deze disachariden en analogen worden onderworpen aan gedetailleerde analyse om hun kenmerken voor voedseltoepassingen te bepalen. De smaak- en textuurprofilering van de meest veelbelovende kandidaten zal vervolgens worden onderzocht.
