Bacteria attributed to Bacillus and related genera contaminate and survive gelatine production processes and hereby negatively affect the quality and safety of the end product. Real-time PCR detection methods for the most worrisome contaminatns were designed in the previous project and are now being implemented in the quality management of a gelatine production plant.
