The overall goal of VeggieChain is to gain fundamental insight into the course of quality parameters (related to health and taste/aroma) of selected vegetables through the different process steps of the vegetable processing chain. Brussels sprouts and leeks were selected as commercially relevant vegetable matrices for Flanders.
