Project description
A shift towards more plant-based protein sources and more local production of plant protein is needed to make the European food system more sustainable. This PhD will assess the environmental and economic sustainability of protein crop production in different European countries and the production of plant-based food alternatives. Furthermore, stakeholder perceptions regarding the alternative protein supply chain will be analyzed.
