Project description

Our daily diet contains too much unhealthy fat rich in trans and satureated fatty acids. Healthier fats can be obtained by changing the fatty acid profile. Another strategy is decreasing the fat storage in the body by incorporation of short and medium chain fatty acids and the substitution of triacylglycerols by diacylglycerols. The phase behaviour of the most interesting mixtures will be investigated.
