Project description

In this project, the substrate specificity of trehalose phosphorylase will be engineered by means of semi-rational mutagenesis. Both its donor and acceptor specificity will be modified towards alternative monosaccharides to allow the synthesis of various trehalose analogues. Such products have applications in the food industry as stabilizers with a mild sweet taste and low caloric content.
