3-MCPD esters
Project description

The project proposes four priority objectives: 1) Develop and implement a reliable analytical methodology to glycidol and 3-MCPD esters in quantifying fats 2) performing a screening of different types of foods on their glycidol and 3- MCPD-ester content. It will of course be given to the analysis of oils and fats and derived products such as margarines, but also on infant and follow-on formulas. 3) The mechanisms at the base of the formation are of 3-MCPD esters and glycidolesters in Control fats investigate 4) define the risk associated with exposure reduction of 3-MCPD esters and glycidolesters.
