Project description

Colloidal dispersions, such as (double) emulions, contain components (such as droplets) on the (sub)micron level. The interactions between these microscopic components largely determine the macroscopic functional properties. In this research project, the link between the microscopic and macroscopic properties will be invesigated into more detail in order to get a better understanding of the underlying mechanisms that determine the product's functionality, which in its turn will enable a better control of these functional properties (by adjusting the product formulation parameters).
