Project description

The research proposal aims to clarify the following research questions.
1. To what extent are zearalenone, a-zearalenol or b-zearalenol released from zearalenone-14-glucoside, zearalenone-14-sulfate, a-zearalenol-14-glucoside and b-zearalenol-14-glucoside, frequently occurring masked derivatives in cerealbased food and feed during digestion?
2. To what extent is deoxynivalenol released from deoxynivalenol-3-glucoside, a frequently occurring masked derivative in cereal-based food and feed during digestion?
3. To what extent are there conversions of zearalenone to a-zearalenol and 13-zearalenol during digestion, and of azearalenol and 13-zearalenol to zearalenone?
4. How is the course of the toxicokinetics of (masked) derivatives of both deoxynivalenol and zearalenone?
5. Can the in vitro and in vivo results be related and extrapolated to the tolerable daily intake (TDI) of both deoxynivalenol and zearalenone?
During the course of the study these research questions will be answered using porcine and human models mimicking the gastrointestinal tract (in vitro and in vivo).
