Project description

Many naturally occurring compounds (bioactives) in plants and animal products are known to have physiological and health-protecting functions. The focus of this project relates to histidine-containing dipeptides (HCD), including carnosine and its methylated analogues. The concept of the project is that dietary intake of HCD can attenuate oxidative and glycative stress and should be taken into account in dietary recommendations.
