Project description
In addition to exogenous antioxidants supplied by the diet, endogenous antioxidant enzymes (glutathione peroxidase, catalase, superoxide dismutase) do also play a role in maintaining the oxidative stability of meat during postmortal storage. The objective of this project is to investigate the contribution of these enzymes.
