This project focuses on the research and development of a new process for the enzymatic production (phosphorylase-mediated) and isolation of α -glucose 1-phosphate (G-1-P) and specific β glucans ( ~ -G) with industrial relevance, wherein maltodextrins warden used as the main substrate.
